FOODIE FRIDAY/SOUP SEASON IS ON IT’S WAY!

Living on the coast of Texas most of my life, I love seafood, just about any kind except  oysters.

Today we are going to serve up a spoonful of comfort.  Nothing beats a bowl of steamy soup on a chilly day. This creamy bisque will soothe the senses and warm the hearts of your loved ones.

 

Crab bisque

2 cups chopped onion

1 cup chopped celery

1 cup chopped green peppers

4 garlic cloves, minced

1/4 cup butter

4 cups diced peeled potatoes

2 cups milk

4 cups  half-and half cream

10 ounces process cheese ( Velveeta), cut in 1

inch  cubes

1 can  (1 pound) crabmeat, drained, flaked

and cartilage removed.

3/4   teaspoon salt

1/4 teaspoon white pepper

In a soup kettle or Dutch oven, sauté the

onions, celery, green peppers and garlic in

butter until tender.   Reduce heat to medium:

add potatoes and   milk.  Cook uncovered, for 20

minutes or until potatoes are  just tender, stirring occasionally.

Remove 1 1/2 cups of the potato mixture; mash

and return to the pan. Reduce heat to low.  Stir in half-

and- half and process cheese.  Cook and stir until cheese

is melted.  Add the crab, salt and pepper.  Cook 10

minutes longer or until heated through.

Serves 12.

 

I do not have a picture because Roy and I are on a diet,

but I think you will really enjoy this bisque.

    I know about diets because I'm on a restricted one at present. I was a bad girl this year. ;-)

  4. I am smiling. Cream soups are not really on anyone's diet list, but they are one of my favorites! I think crab is my very favortite food and I will give this a whirl! Good luck to you and Roy on your diets!

  9. Today is so much cooler, a big bowl of your chili would taste good. Since I do not cook much anymore, I'll take your word it is good. To answer your question, no I really do not go out much at night, especially not to take pictures. I do take my camera with me everywhere. The moon shot was taken from my front yard.
