GREAT FINGER OR TEA SANDWICHES !
These are finger sandwiches that you can make several days in advance and freeze.
Creamy Date Nut Filling
5 packages of cream cheese softened(20 oz.)
1/2 tsp. salt
2 c chopped walnuts
2 2/3 c chopped dates
Blend until creamy; then add nuts and dates. Makes enough filling for 100 tea sandwiches.
Olive & Nut Filling
32 oz. cream cheese
3/4 chopped olives with red centers
2 c. chopped toasted ( in margarine) pecans
1/2 to 3/4 cream or milk
Whip cream cheese; add milk until soft enough to spread. Fold in nuts and olives. Spread on thin sliced bread. Trim crust. Cut into finger or triangles. Chill; covered until ready to serve.
1 can asparagus (long stem)
salt and pepper
Good square white bread
Remove asparagus sears from can and spread on paper towels to drain for about 2 hours.
Remove crust from bread and spread each piece with butter and generously with mayo.
Put one spear diagonally on bread, sprinkle generously with S & P , then roll from the corner to make a tube and I cut them in half.
I put them on a plate and cover with foil, Tupperware doesn’t seem to work for some unknown reason. Refrigerate for several hours and take out of fridge about 1/2 hour before serving.
I love Fruit Filled Sandwiches…they are easy and can take the place of fruit on a plate, I have used them with soup.
Pineapple Sandwich Filling
1 20 oz. can crushed pineapple with juice
6 Tbsp. sugar
1/2 tsp salt
1/2 cup mayonnaise
Mix all ingredients except mayo and cook over medium heat until thick. Remove from heat and add mayo. Makes delicious party sandwiches. Can be stored for several days.
CREAMY STRAWBERRY SANDWICHES
1 loaf white or wheat bread
16 oz. cream cheese, softened
1 box strawberries
finely chopped nuts
Run strawberries and cream cheese through food processor. Remove crust from bread. Spread mixture on bread. You can cut them in any shape you wish, top with half a berry and sprinkle with chopped nuts.
Wishing you the Best Foodie Friday!
